While many gardeners wait for warm weather to start planting, cool-weather vegetables offer a head start on the growing season. The key is knowing when the soil is ready—if you can easily turn it with a shovel, it’s time to plant! These hardy varieties thrive in the crisp temperatures of early spring, making them perfect for an early harvest.
Here are some cool weather vegetable suggestions worth trying
Lettuce
There is nothing like fresh lettuce for your salads. It takes but a little time, space and energy and lettuce always tastes best when it matures in cool weather.
Spinach
Ideal for cooler weather, spinach is a must-have in your spring garden lineup. Plant seeds or transplants early for tender leaves that are perfect for salads, smoothies, or cooked dishes, offering a delicious and nutritious addition to your meals.
Carrots
For long, straight carrots, plant them in raised beds or sandy loam soil free of stones. Sweet, tender young carrots make a wonderful snack.
Collards
Thriving in cooler temperatures, collards are the perfect addition to your early spring garden. Whether you're starting from seeds or transplants, these hearty greens promise a bountiful harvest, ideal for soups or stews.
Broccoli
It might not be everyone’s favorite, but it ought to be. Broccoli is very good for you and is easy to grow!
Tips for Success
1. To get the most vegetables throughout the year, plant cool season veggies now, then warm season veggies in the summer, and then replant the more cool season ones in the Fall.
2. Choose a well-drained spot that gets as much sun as possible. This kind of space is likely to provide warmer soil temperatures.
3. If your soil is not frozen, you can start preparing the ground. Use a shovel to turn the soil. Add some organic matter such as compost or planting mix, along with some fertilizer. If your soil is still frozen, containers are a good alternative.
4. Water deeply, but less frequently. Plants in general need less watering in cooler temperatures.
5. Plant seeds or plants according to the directIons found on the seed packets or plant tags.
